Better than my expectations
Gluten-free flours are still pretty limited when it comes to replacing wheat flours - that's just the state of things in this still new culinary frontier. That said - it made a couple of really good coffee cakes here. I think use in pastries which need low- structural protein flours. Like cakes, pie crusts or fried items.It doesn't hold as much moisture as regular flour (that's another job gluten does well) - However, it doesn't stale as quickly either.If your main goal is eliminating gluten from your diet - you will be very happy with this flour. I'll be using it for muffins & quick breads next. But if you are hoping to bake a close facsimile of a chewy ciabatta, this isn't the stuff.

You'd never know its gluten free!
King Arthur's is the best measure for measure gluten free flour I've ever used. Always consistently good, great texture and makes the best treats like cookies! Honestly you'd never know its gluten free!
